JAMS AND PRESERVES
Our classic jams and preserves are made with simple, natural ingredients. For the choice of fruit, we enjoyed “getting out in the field” to find the most reliable farms; many are organic, others do not even use what is allowed in organic farming: they simply do not treat at all! We were lucky enough to taste fruit so ripe it had a “sun-kissed flavor,” but even more fortunate to be able to process it. We use sugar, almost always raw cane sugar, 100% Italian; we do not use citric acid but untreated lemon juice; if pectin is used, it is the natural kind derived from citrus fruits; we do not use preservatives and colorings are banned. In addition to the classics, we have created more refined jams and preserves, born from the fusion of fruit with unique ingredients such as champagne, chocolate, amaretto, ginger... Everything is cooked under vacuum, at low temperatures, which allows us to preserve the organoleptic characteristics of our products, as well as their taste and color. Furthermore, the innovative pasteurization and sterilization phases that follow the jar filling allow us not to compromise any of the properties of the finished product. Only in this way can we obtain jams and preserves with very high percentages of fruit and very little sugar.
